Classic imperialism, the US and the UK think they have superior ideologies and will continue to push this agenda throughout the world. It's a case of we think our way of life is better than yours, so we'll force it down your throat by installing dictators and supporting them until the end goal is reached. But if you rebel against us, we'll crush you and replace you.
The middle east is a key stratetgic location, it allows the US to keep tabs on Iran and the rest of the eastern "threats".
Otherwise what value does Israel hold for the US? They've extended influence all over the world only to abandon countries and it's people such as Afghanistan and Iraq.
During the cold war they tried the same in South America to undermine the growing influence of Communist Russia. In the end it's the civilians on both sides that suffer.

I think the situation regarding the Cold War and South America compared to Israel is slightly different.
The US has never seen any of the South American countries as “one of us” so the US will criticise them if they go against US values or go against US interests. But Israel is “one of us” so they can’t challenge - Israel established itself similar to how the US did and with a lot of the US's support.
If America challenges Israel’s existence or the means it uses to establish itself, they have to admit how America was formed was also wrong and/or supporting Israel is/was a mistake.
This has been made worse by the American media and politicians (and now it’s citizens) having pushed the idea US values are aligned.
Considering there is a possibility Israel might be wrong would put America on a slippery slope so it’s safer for them to turn a blind eye even if they are obvious (i.e. starving innocent civilians) or manipulate information (i.e. blaming Hamas for Israel breaking international laws and starve innocent civilians).
